When to pull the corks on your KB wines?

While the production team is busy hand sorting pinot noir, and workingthrough the fermentation process, the intoxicating aromas offermentations in the winery evokes a warm feeling about our wines andthe process. As we are a few days away from the Fall 2009 SingleVineyard release, we conducted our annual tasting of the 2007 SingleVineyard wines with our harvest interns and full time staff. Thequestion came up about when to drink our wines, especially the SingleVineyards. And this is a very subjective question. For example; at whattemperature do you enjoy eating grilled meats - rare, mid-rare, mediumor mid-well?

For my palate, the sweet spot for consuming most of our Pinots is4-5 years from vintage. The 2005 vintage wines are intense, integratedand focused. I'm really enjoying them at the moment. The 04's, and 03'sare showing a little more age, but with that age comes more secondaryflavors that most people enjoy. Those two vintages gave us some prettyintense wines that frankly won't have the cellar distance as say, the06 and 07 vintages. I predict that our 06 Pinots will age quite nicely.In fact, I think they want a little more time in the cellar. As wetaste the beautiful 07 Single Vineyards with the staff, boy do theytaste great young. It's going to be hard for me to keep my hands off ofthem, and I'm not sure if that's a bad thing. As this is a forum, letme know what you have found to be the best time to drink your KostaBrowne wines. I'm curious to know. At any rate, I believe we arecreating some of the most delicious Pinots we've made to date. And withthat, we hope you enjoy the wines from the Fall release, whether youdrink them young or let them age a few years!
